Louise’s Best Brownies

Michael’s Dad’s partner Louise was on a quest to find the perfect brownie recipe earlier in the year. Lucky for me her idea of the perfect brownie and mine are well aligned.

On the down side, when you’re temporarily living alone making a pan of brownies means eating a pan of brownies. By scrolling down and reading the recipe you are also agreeing not to judge me.

Louise’s Best Brownies

1 cup plain flour

1/2 cup cocoa powder

2 cups sugar

1 cup chocolate pieces

250g butter

2 tsp vanilla essence

4 lightly beaten eggs


Preheat the oven to 180oC

Sift together dry ingredients, add chocolate and mix well. Combine melted butter and eggs and add to the dry ingredients. Pour into a 20x30cm tin and bake for 32 (Louise was very speccific about this) minutes.

Let cool before cutting and serving.


Now excuse me while I go suffer a heart palpatation!
